Buckwheat Jam Cookies

Toasted Buckwheat Jammie Dodgers 2 from kirantarun.com

Buckwheat cookies sandwiched with delicious jam.

Make these cookies using by grinding toasted buckwheat groats into fine flour or using buckwheat flour. Toasted (or roasted) buckwheat is also known as Kasha. This term is commonly used in many countries for toasted buckwheat.

Buckwheat is available raw or toasted. Toasting enhances it nutty flavor. Either you can buy it already toasted or by toasting raw buckwheat on a skillet for 5 – 10 minutes, stirring frequently, until it becomes browner.
