I love, love, love chocolate chip cookies! Okay, who am I kidding, I love anything sweet!  But, yes there is a but, I am trying (very slowly) to replace traditional flour with buckwheat flour. Let me tell you, its not an easy thing to do.  After many failed recipes with baking with buckwheat, I found this chocolate chip recipe that I promise you won’t be able to tell they’re gluten free.

Ingredients:
1 1/8 cup buckwheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup brown sugar
1/2 teaspoon vanilla extract
1 large egg
1 cup chocolate chips

Instructions:
1. Preheat oven to 375° F (190° C).
2. Line baking sheet(s) with parchment paper.
3. Combine dry ingredients in a medium bowl and mix to combine. Set aside.

    • It depends on how much buckwheat flour is added into the recipe. For cookies it gives a nice crumbly texture and a slight nutty taste. If you find the taste too strong for you when using buckwheat flour alone, you could try mixing with other types of flour.
