Seeing as it’s Christmas – the season of indulgence – these classic gingerbread squares are perfect for filling you home with festive aromas. They’re a little bit naughty but if you don’t eat the whole batch in one go (which is hard I know) then you’ll be fine. I have reduced the amount of sugar, halved the amount of syrup and substituted plain flour for wholewheat buckwheat flour.’

Buckwheat Chocolate Chip Cookies


I love, love, love chocolate chip cookies! Okay, who am I kidding, I love anything sweet!  But, yes there is a but, I am trying (very slowly) to replace traditional flour with buckwheat flour. Let me tell you, its not an easy thing to do.  After many failed recipes with baking with buckwheat, I found this chocolate chip recipe that I promise you won’t be able to tell they’re gluten free.

1 1/8 cup buckwheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup brown sugar
1/2 teaspoon vanilla extract
1 large egg
1 cup chocolate chips

1. Preheat oven to 375° F (190° C).
2. Line baking sheet(s) with parchment paper.
3. Combine dry ingredients in a medium bowl and mix to combine. Set aside.
